Lemon Garlic Chicken and Rice! 🍋This recipe has it all: it’s quick, it’s tasty, and it keeps for days in the fridge for all you meal preppers. Check it out:
-1 rotisserie chicken, shredded
-1+1/2c brown rice, uncooked (but obvi you’re gonna cook it)
-1 lemon, juiced
-1/2c soy sauce (low sodium if desired)
-2T rice vinegar
-Bunch of green onions, sliced
-6+ garlic cloves, minced
-4T sesame seeds
-2T red chili flakes
-Shred the chicken. Cook the rice.
-Combine the rest of the ingredients in a bowl and whisk.
-In a large saucepan over medium heat, add 3T butter, and then chicken. Salt and pepper to taste. Add in cooked rice and sauce mixture.
-Sautee for ~5-10 minutes to desired texture and temperature; season to taste; serve and enjoy!
