Grilled Chicken and Veggie Salad — a home run in my book! 🥗🍽Here’s a recipe that is tasty, quick, nutritious, and can be mostly prepped days in advance for busy work weeks. Check it out! >>
-1/4c balsamic vinegar
-3T olive oil
-2T brown sugar
-3 cloves garlic, minced
-1t dried thyme
-1t dried rosemary
-4 chicken breasts, trimmed
-Salt, pepper to taste
-Vegetables of choice for the salad: we used carrots, red peppers, onion, and cherry tomatoes
-Choice of lettuce/salad: we used arugula and spinach
-Choice of dressing: we used light ranch
-Whisk together vinegar, oil, brown sugar, garlic, herbs, and spices. Reserve 1/4c.
-Marinate the chicken for at least 20min in the sauce mixture.
-Chop vegetables to desired size; toss in olive oil, season with salt and pepper.
-Grill marinated chicken and vegetables on a medium heat grill until chicken is cooked through, about 6min per side.
-Toss the grilled chicken, vegetables, salad, dressing, and any extra seasonings you’d ike to add — and VOILA!
