—–MARINADE INGREDIENTS:
-1# chicken breast, trimmed and chopped into small pieces
-1T olive oil
-1 fresh lemon, squeezed
-Lotsa garlic, minced
-Fresh parsley and basil, minced, to taste
-Salt and pepper to taste
—–PASTA INGREDIENTS:
-8oz pasta, cooked and drained
-2T olive oil (can use butter instead)
-1/2 fresh lemon, squeezed
-Lotsa garlic, minced
-1c cherry tomatoes, grilled or oven baked
-Parmesan cheese to taste
-Fresh parsley and basil, minced, to taste
-Salt and pepper to taste
-Crushed red pepper, LIGHT!, to taste
-Can add vegetables to taste: spinach, zucchini, red peppers, you choose!
—–DIRECTIONS:
Prepare the chicken, let marinate for at least 20min. Put the pasta on the stove, cook while the chicken is marinating and grilling. Chop the tomatoes. Grill the chicken and the tomatoes. Toss the chicken, tomatoes, pasta, and all remaining ingredients thoroughly. ENJOY!
