-New potatoes (or fingerling potatoes, or choice)
-Salt, pepper, thyme
-Salad/lettuce of choice
-Salad dressing of choice
-Vegetables of choice for salad: I like spinach/arugula, carrots, red peppers
-Chicken breasts, cut into cubes
-1T olive oil
-4 garlic cloves, minced
-1 1/2T apple cider vinegar
-Salt and pepper to taste
-Preheat oven to 450*. Cut potatoes in half. Season with light olive oil, salt, pepper, and thyme. Bake for 20min or until desired crispiness.
-Chop vegetables for side salad; set aside.
-In a medium size, medium-heat pan, heat olive oil and 1T butter. Add chicken, season to taste. Let cook for a few minutes.
-Add remaining butter, garlic, vinegar, and honey. Stir. Simmer sauce for 5-10min. Add 1-3T cornstarch to thicken if needed.
-Serve chicken, salad, and potatoes all together. Enjoy!
