JALAPENO BEEF MAC ‘N CHEESE recipe! 🌶🥩🍜Can be made with or without the cheese/gluten, and feel free to sub the pasta and/or meat of your choice. We’ve been on this for two weeks and are loving it! It keeps all week so it’s perfect for meal prep and I find myself actually looking forward to it each night. Check it out!

INGREDIENTS:
-1 yellow onion, chopped
-2-4 large carrots, chopped
-3+ cloves garlic, minced
-1 red pepper, chopped
-3 jalapenos, minced
-2T chili powder
-2T cayenne
-2T cumin
-2T paprika
-Salt, pepper, and garlic salt to taste
-2# ground beef
-1C tomato sauce
-2C vegetable broth
-2 boxes macaroni of choice
-1T maple syrup
-OPTIONAL: beans, lentils, olives, or artichokes

DIRECTIONS:
-In a large skillet over medium heat, toss 1T butter with all vegetables. After two minutes, add all seasonings and stir, continuing to cook for a few more minutes.
-In a separate skillet, also over medium heat and 1T butter, sautee the beef with plenty of salt, pepper, and garlic salt. Cook through; drain and set aside.
-Cook noodles according to package directions.
-After a few minutes of vegetables sauteeing, add the broth, tomato sauce, and maple syrup. Bring to a boil, then reduce heat and simmer for 15-20min.
-Combine noodles, beef, and then pour sauce mixture over the top and stir. Add cheese of your choice, either to the whole mix or on each serving — I used shredded parmesan and sharp cheddar!
